Egg fried rice (Desi style)

Egg fried rice is a quick and easy recipe that can make a great lunch or dinner. It is done even fast if you already have left-over rice at home. In the following recipe, I’ve given a slightly desi twist to it so that it suits the desi palate, at the same time, does not lose the essence or flavor of the regular chinese fried rice. Try this delicious, easy to make recipe and let me know your thoughts.

Egg fried rice

Ingredients:

Basmati rice: 1 cup

Carrot: 1 cup (finely chopped)

Cabbage: 1 cup (finely chopped)

Spring onion (white portion): 1-1/2 cups (finely chopped)

Spring onion (green portion): 1-1/2 cups (finely chopped)

Green chili: 2 (finely chopped)

Pepper powder: 4 tsp (divided into 2 half portions)

Lemon juice: 1-1/2 tbsp

Egg: 4 (large) or 5 (small)

Olive oil: 3 tbsp

Salt: to taste

Method:

Step 1: Cook the basmati rice (you could pressure cook or microwave it) and then allow to cool. For quick cooling you can keep it in the refrigerator or freezer for some time.

Step 2: Heat 2 tbsp oil in a pan and add the green chili to it and allow to splutter.

Step 3: In high heat, add the white portion of the spring onions and saute until onions turn translucent.

Step 4: Add carrot and cabbage and saute for a few minutes.

Step 5: Add lemon juice and pepper powder and salt to the veggies and saute for a few minutes. Reduce to Low heat.

Step 6: Add the cooled rice and mix well.

Step 7: Move the rice to one corner of the pan. Heat the remaining 1 tbsp of olive oil on the other end.

Step 8: Add the eggs and scramble them. Add remaining pepper powder and salt to taste. Once the eggs are done, mix with the rice and saute for a few minutes.

Step 9: Garnish with the green portion of the spring onions. Saute for a few minutes and remove from stove.

Step 10: Serve hot with your desired side-dish. Good side-dish combos for egg fried rice could be Pepper chicken curry, Butter chicken curry, Mushroom pepper gravy, Gobi Manchurian, etc.

Note: If you find it difficult to perform Step 8 in the same pan with the rice, you can scramble the eggs in a separate pan and then add them to the rice.
